L’huile essentielle de sarriette est riche en monoterpènes et en phénols monoterpéniques, aussi c’est une huile tonique et stimulante générale de l’organisme. Cette propriété s’explique par la stimulation des corticosurrénales. Elle est réputée pour lutter contre la fatigue, améliore les fonctions mentales et sexuelles, stimulante physique et psychique.
Elle est également Anti-infectieuse puissante à très large spectre d'action (bactéricide, fongicide, parasiticide, virucide) : infections respiratoires (angine, encombrement des bronches, sinusite, grippe), intestinales (gastro-entérite, diarrhée du voyageur), urinaires, mycoses, infections tropicales, etc…donc elle peut être utilisée de façons très différentes pour un large spectre de maladies et symptômes.
Cette huile est interdite chez les femmes enceintes et allaitantes et chez les enfants de moins de 12 ans.
Elle est déconseillée chez les personnes sujettes à l’hypertension et en cas de pathologie hépatique.
Elle est Dermocaustique : à diluer fortement dans une huile végétale quand utilisée par voie cutanée.
